I bought a 29 oz can of Libby's pumpkin, added my spices, mixed it up and realized I had enough for 2 pies but only one crust.  Does anyone have a recipe to use up the extra batter?  Maybe

What can I do with leftover pumpkin pie batter?

I bought a 29 oz can of Libby's pumpkin, added my spices, mixed it up and realized I had enough for 2 pies but only one crust.  Does anyone have a recipe to use up the extra batter?  Maybe a bread?  Maybe a cupcake?  Please remember the eggs, evaporated milk and spices are already in the mix.  Thanks so much.  Hope everyone has a wonderful Thanksgiving!

Hummm, how about mixing in some cream cheese and using a graham cracker crust instead of a pie shell?  I guess it will be more of an experiment than anything!

You could freeze it and then you would have a filling for an other pie later.

HAPPY THANKSGIVING.  Pumpkin pie batter can be baked in a greased cake pan.  Test it the same way you would test the pie to see if the center is firm.  I've made this, called pumpkin custard several times and we enjoy it as much as pie without the extra calories.

I tried posting this a few minutes ago but it didn't seem to take, so I'll try again.  I've used the batter to make what I call "pumpkin custard", though it is a bit heavier than custard.  Just pour the left over mix into a container that is appropriate for the amount you have left.  For example, you could bake it in a pie pan without crust.  Grease the pan first.  I've also used a small rectangular pan measuring about 4 x 7 or so and baked it that way.  Test for doneness the same way you would for pie by besting the middle of the pie with a silver knife to see if the custard is setting up.  I like to sprinkle chopped walnuts over the top of the custard before baking.

I have frozen it before, but that custard idea sounds good.
If you have makings for a cooked cheescake, you can make a pumpking cheescake.

I AGREE w/hARRIET G; I  USUALLY BAKE MY pumpkin PIE FILLINGJUST LIKE THAT.( no crust) It fits better into a diabtic's meal plan.I have several friends& family members who apreciate the filling  being"legal" for them.

Great idea Harriet.  I will have to keep this in mind next time I have too much pumpkin mix.  Always good to know how to utilize it rather than throwing it out.  Happy Thanksgiving everyone.

Ooh! Thanks so much, Harriet! I have some pumpkin mix in the frig that my sister gave me on Thanksgiving Day. Didn't want to make pumpkin pie again right now cause she just had one for Thanksgiving. I know you can can pumpkin, but I didn't know for sure whether you could freeze it or not. But I guess, after reading a couple of posts here, that you can, huh?
Thanks, Harriet, for that tip about custard. I have butternut squash cooking in the oven right now. I think maybe when it comes out I will bake some pumpkin custard!!

Juts put it into custard cups or a pie plate sprayed with pan spray and bake till set....It is more healthy that way .
