In Response to What can I do with leftover pumpkin pie batter?:
I bought a 29 oz can of Libby's pumpkin, added my spices, mixed it up and realized I had enough for 2 pies but only one crust. Does anyone have a recipe to use up the extra batter? Maybe a bread? Maybe a cupcake? Please remember the eggs, evaporated milk and spices are already in the mix. Thanks so much. Hope everyone has a wonderful Thanksgiving!

I tried posting this a few minutes ago but it didn't seem to take, so I'll try again. I've used the batter to make what I call "pumpkin custard", though it is a bit heavier than custard. Just pour the left over mix into a container that is appropriate for the amount you have left. For example, you could bake it in a pie pan without crust. Grease the pan first. I've also used a small rectangular pan measuring about 4 x 7 or so and baked it that way. Test for doneness the same way you would for pie by besting the middle of the pie with a silver knife to see if the custard is setting up. I like to sprinkle chopped walnuts over the top of the custard before baking.
