Hello, can I freeze canned pumpkin? Sometimes I have leftovers and I don't want to see them go bad (obviously I do not leave the leftovers in the can, I put them into an airtight container and store it in the refrigerator.) Many recipes call for a full can and that extra from the last can from a previous recipe tends to just sit in there until I clean out the fridge and toss it. Also, what is the recommended length of time to keep leftover pumpkin, refrigerated, given the conditions above? If it can be frozen, how long can it be kept in an inside freezer? A deep freezer?

Charles, I believe you could easily freeze the pumpkin. I've bought pumpkin pies that were frozen. I can't see what the difference would be. However, we have some really sharp bakers on this site, so maybe one of them has something different to say.
Not sure how long it would be safe to keep the pumpkin frozen but you could probably ask the baking site, since they list Libby's as one of their products.
