Margarine
Like butter, is required by law to contain 80% fat. The rest is water, with milk solids and salt. Most margarine is enriched with vitamins and colored to look more like butter. Margarine is perishable and must be kept covered and refrigerated. One tablespoon of margarine has 100 calories. Margarine is often made with corn oil, soy oil, safflower oil, or other oils. In cooking and baking, margarine may produce textures somewhat different from butter, and may lack the desirable butter flavor. Use regular stick margarine in recipes instead of whipped tub margarine, reduced-fat or diet margarine.

Corn Meal
Is made by grinding white or yellow corn to a government-specified fineness. There is little difference nutritionally, or in the baking properties between yellow and white corn meal.

Freeze Cookies
Tightly wrapped in heavy-duty foil and sealed in zipper-type plastic bags for up to 3 or 4 months.

Quick Chocolate Glaze
Right after baking, sprinkle 1 c. (6 oz.) Nestlé® Toll House® Semi-Sweet Chocolate Morsels over the top of a pan of brownies. Let stand 5 minutes; spread softened morsels over brownies. Cool completely before cutting.
