Salt
May be entirely omitted from the Original Nestlé® Toll House® Chocolate Chip Cookie recipe. If you omit the salt, no other adjustments to the recipe will be necessary. Salt is present only as a flavoring agent and will not effect cookie texture or appearance.

Omitting Eggs
Is acceptable. When you omit eggs, use 2 T water instead. Bake for 8 to 10 minutes, or until lightly browned. Do not over-bake. Store in a tightly sealed container to prevent drying. Omitting the eggs from dough produces a cookie that is chewy on the inside, crispy on the outside.

Folding in Beaten Egg Whites
Should always be done by hand to retain as much air in the whites as possible. Work quickly and gently. Add the lighter mixture to the heavier one, then blend using a sharp action like cutting through a cake. Then, with a lifting motion, bring the heavier substance up from bottom of bowl to completely cover whites. Repeat the slicing and lifting motions, turning the bowl, and trying not to break down air in beaten whites.
