Advice :: Jenny's Very Best :: Hopping Good Dessert

Jenny's Very Best

Hopping Good Dessert
-by Jenny Harper

I've often thought that if the Easter bunny hung around to see what's for dinner, perhaps he wouldn't high-tail it after hiding his colored eggs!

Of all the entertaining possibilities spring presents, gathering family and cherished friends for a Easter dinner is tops on my list. My Easter tradition includes surprising my guests with a knock-your-socks-off special dessert. This year, a sublime Chocolate Banana Cream Pie will be eagerly anticipated. I'll keep mum about how easy this impressive pie is to make: The chocolate chip cookie dough crust is filled with banana slices and creamy pudding spread with whipped topping. I crown each serving with a swirl of chocolate syrup and some mini chocolate chip morsels.

Serve this spectacular, jaw-dropping dessert while wearing your halo, as the cookie dough crust contains zero grams of trans fat. Once Easter-egg-hunters spy your pie, they won't stray far!

Love baking with the kids but don't have time? Gather the kids, use refrigerated cookie dough and enjoy a spring-themed cookie baking and decorating session in your kitchen:

  • Let kids use fun, seasonal refrigerated cookie dough with pre-cut Easter shapes.
  • Place and bake the pre-cut bunnies, chicks and tulips on a baking tray, then bring out the icing and sprinkles for some decorating fun.
  • Tint vanilla icing pastel colors for decorating, or look for spring-colored sugar and sprinkles to put a crowning touch on baked cookies.
  • Let kids nestle decorated cookies into Easter-grass-lined baskets and give as gifts to family and friends.
