I didn't know pumpkin could be used to replace oil in cake mixes! That's such a great tip. I loved the parfait recipe too. I can't get enough of pumpkin in the fall because it's such a comforting flavor. I am making chili on Sunday and will defiantly be adding pumpkin now!
